Beef Satay, Peanut Sauce, Cucumber Salad

This is my favorite meal as of late!

 Beef Satay

1/2 cup peanut oil
Juice of 1 lime
1/4 cup chopped green onions
2 TBSP minced fresh ginger or 1 tbsp ground ginger
2 TBSP soy sauce
1 TBSP Asian chili paste
(I always double the marinade)

1 LB of beef (I just use the fast fry steaks and cut them into strips)
or chicken (cut into strips)
or pork tenterlion (cut into strips)

Marinate in sauce covered at room temp for 2 hours, turning occasionally.
Can be refridgerated over night.
Soak skewers for 30 minutes. Skewer meat. Grill over brickets for best flavour.

Serve with steamed rice, cucumber salad, peanut sauce. Enjoy

Peanut Sauce

1 can coconut milk
1/4 cup Asian chili paste
1/2 cup chunky peanut butter
1/4 tsp salt
1/4 cup sugar( or less depending on how sweet the peanut butter is)
2 TBSP Rice vinegar
2 TBSP soy sauce

Mix all together in a sauce pan on med-low heat. Cook till thickened.


Cucumber Salad

2  cucumbers, peeled and seeded
2 tsp salt
2 Tbsp sugar
1/2 cup rice vinegar
4 shallots, thinly sliced
1 TBSP Asian chili paste

Cut and seed cucumbers. Dry off on paper towels.
In a bowl add all ingredients and let marinate for an hour in the fridge.
